Our client is a luxury 5-star standard hotel set in a beautiful Victorian building, in the Kensington area of London. Breakfast is the busiest time of the day for the team which is served as a buffet, before a selection of lighter meals and snacks become available in another restaurant at lunchtime. Traditional afternoon tea is a popular affair here and caters for an average of 30 covers per day during the week, but 2 sittings are held at weekends. At dinner, diners have a choice of a traditional Italian restaurant which caters for an average of 20-30 covers per day, whilst another restaurant offers a choice of sharing plates and charcuterie.
Please be aware that accommodation is not available with this role, therefore candidates should only apply if they are able to commute to London daily.
What's involved?
As the Head Chef, you will ensure the smooth running of a busy kitchen, leading a kitchen team of 12-14 including KP's, ensuring the highest standards of food hygiene and health and safety at all times. You will oversee the preparation, cooking, and presentation of food for all outlets and services including breakfast, lunch, afternoon tea, bars, room service, and C&B.
You will be responsible for the staff rota and recruiting as well as training and developing the team as well as creating the departmental standard operating procedures and policies and keeping this up to date.
The Head Chef will be passionate about keeping up with the latest food trends; some of which should feature when creating your new menus and their costings. You will also ensure that food is of the right quality and price to ensure you achieve your food budget costs of sales, with minimum wastage.
The successful candidate will be an experienced chef, with a hotel background. You will have a passion for working with fresh ingredients and creating meals that leave the guests wanting more!
