This is a hands-on, skilled role focused on preparing premium-quality fresh fish and seafood for retail customers. Proven experience as a Fish Filleter or Fishmonger
Buying experience desirable but not essential
Filleting, skinning, pin-boning and portioning a wide range of fresh fish
Fast, accurate knife skills with an eye for quality and presentation
Scaling and preparing whole fish for display and sale
Peeling and deveining prawns and langoustines
A solid understanding of food hygiene requirements, food hygiene certificate desirable however training can be provided
Must be able to work efficiently in a fast-paced, chilled environment
